The combo platter at Chef Alex Seidel’s recently opened Southwest Portland pizza spot, Brasa, is made up of spicy pork and broccoli rabe (pizza — it’s a thing) topped with mozzarella and pesto.
“Pizza as a metaphor for all-American family,” says Seidel, owner of the business with his wife, Erica, which also includes the former Biscuit Love and Barista’s, and a cocktail program at Yak & Yeti.
It’s certainly not the first pizza-related metaphor, but the idea came to Seidel after an experience in the ‘70s, when he worked for the Coca-Cola company and was told his job title had “pizza” in it. “There was this big push at the time for multiculturalism,” he says, “and we were very proud that we were the only company that made pizza in a bunch of different cultures.”
Brasa’s menu — which is topped with a wide variety of toppings from old country to Mexican-American to Greek and Italian — includes the aforementioned combination of pork, broccoli rabe, mozzarella and pesto. And the option can be added to a Caesar salad for a tasty and guilt-free lunch, if you’re looking for a little variety.
To make it, follow this simple three-step recipe: First, finish off your favorite Caesar salad. While brine is usually most common, you can go just a little lighter and opt for lemon juice instead.
Second, add four teaspoons of pesto to the salad. “Pesto is very acidic,” Seidel says, “and it helps to cut the acidity of the lemon juice.” You can find pesto in the refrigerated or frozen section of your grocery store. You’ll also need about a cup of olive oil to make the pesto.
